Thai basil-soy tofu
Ingredients
- 2 cakes tofu (firm)
- 0.5 C soy
- 2/3 C veggie stock or water
- 2 T lime juice
- 1 T minced ginger
- 2 cloves garlic
- 1 t sambal oelek
- 2 oz palm sugar
- 0.25 C chopped Thai basil
Instructions
- slice the tofu into half-height slabs
- simmer everything but the basil and the tofu
- add the basil and cover the tofu
- marinate 8 hours
