Thai basil-soy tofu

Ingredients

• 2 cakes tofu (firm)
• 0.5 C soy
• 2/3 C veggie stock or water
• 2 T lime juice
• 1 T minced ginger
• 2 cloves garlic
• 1 t sambal oelek
• 2 oz palm sugar
• 0.25 C chopped Thai basil

Instructions

• slice the tofu into half-height slabs
• simmer everything but the basil and the tofu
• add the basil and cover the tofu
• marinate 8 hours
