Sourdough Whole Wheat Loaf

This is based on the King Arthur Recipe. It’s a “hybrid’ sourdough, and most of the rise is from the straight yeast, with the sourdough just adding flavor.

  1. Combine and mix to a shaggy dough
  2. Rest 20m, covered
  3. Knead until smooth
  4. Rise in an oiled bowl until doubled, 60-90m
  5. Fold, shape, and place in a 9x5 loaf pan; rise until crowned, 60-90m
  6. Score the top
  7. Bake at 350°F 40-45m
