Sourdough Whole Wheat Loaf
This is based on the King Arthur Recipe.
It’s a “hybrid’ sourdough, and most of the rise is from the straight yeast, with the sourdough just adding flavor.
Ingredients
- 3 C whole wheat flour
- 2 T vital wheat gluten
- 1.25 C water
- 1 C happy sourdough starter
- 1 t salt
- 1 packet instant yeast
- 2 T vegetable oil
Instructions
- Combine and mix to a shaggy dough
- Rest 20m, covered
- Knead until smooth
- Rise in an oiled bowl until doubled, 60-90m
- Fold, shape, and place in a 9x5 loaf pan; rise until crowned, 60-90m
- Score the top
- Bake at 350°F 40-45m
