Lentil and Mushroom Stew
This is from 1000 Vegetarian Recipes. It’s made with a different kind of lentils, and it’s bland but palatable. Definitely not on the favorites list, but it’s easy to make with at-hand ingredients.
Ingredients
- 1.5 T olive oil
- 1 C sliced leeks (no leaves)
- 2 cloves garlic
- 2 C chopped mushrooms (portabello or shiitake)
- 2 C sliced white mushrooms
- 0.75 C red lentils (masoor ki dal)
- 1 bay leaf
- 5 C water
- 1 C sliced carrots
- 1 C green beans, cut
- 0.5 C parsley
- 0.25 t thyme
Instructions
- sautee the leeks and garlic
- add mushrooms and allow to soften
- add the water, boil, and add the lentils and bay leaf. Boil, then simmer 25 minutes
- add remaining ingredients and simmer 15 minutes
