Glazed Lemon Zucchini Bread
Ingredients
- 2 C cake flour
- 0.5 t salt
- 2 t baking powder
- 2 eggs
- 0.5 C canola oil
- 1.3 C sugar
- 2 T lemon juice
- 0.5 C buttermilk
- 1 lemon’s zest
- 1 C zucchini, grated
Glaze:
- 1 C powdered sugar
- 2 T lemon juice
- 1 T milk
Instructions
- Mix dry goods (sugar is not a dry good!) and set aside
- Beat eggs, add oil and sugar, and blend.
- Add lemon juice, buttermilk, lemon zest, and blend.
- Fold in zucchini
- Add dry to wet
- Pour into a 9x5 loaf pan
- Bake at 350°F 40-45 minutes
- Spoon glaze over warm bread and allow to set.
