Chickpea Blondies (Almost Vegan)
Ingredients
- 15oz can chickpeas, rinsed and drained
- 1/2 cup almond butter (or peanut butter)
- 1/3 cup maple syrup (or agave nectar or honey, although honey is not vegan)
- 2 tsp vanilla
- 2 eggs (optional, omit to be vegan)
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup chocolate chips, divided (note that not all chips are vegan)
- sea salt
Instructions
- Preheat oven to 350°F and grease pan
- Mix all ingredients except chocolate chips in a food processor until smooth
- Fold in 1/3 cup chocolate chips (reserving about 2T)
- Spread in a 8x8” square pan
- Sprinkle on remaining chocolate chips
- Bake for 20-25 minutes or until a toothpick comes out clean and edges are slightly browned
- Cool, spinkle with salt, and cut into squares
