Recipe:Succotash Salad

This is from a post to Well Fed. It prompted me to look up exactly what succotash is -- basically anything with corn and lima beans. Anyway, this was quite a tasty salad, although the preparation was a bit longer than most salads. My modifications are included here as well.

Ingredients

Dressing

  • 1 T diced shallot
  • 3 T lemon juice
  • 0.5 C olive oil

Salad

  • 0.75 C red onion
  • 1 t dried thyme
  • 2 C diced yellow summer squash
  • 3 C corn (frozen is OK)
  • 1/2 pint cherry tomatoes, halved
  • 1 C lima beans (frozen is OK)
  • 3 T pesto, or 0.5 C sliced fresh basil
  • 2 T chopped parsley
  • 1 T minced chives
  • 4 oz mixed greens

Instructions

  1. Whisk the dressing ingredients together, along with a pinch of salt, until emulsified
  2. Saute red onion in olive oil for about a minute, then add squash, thyme and a pinch of salt.
  3. Pour the squash out and allow to cool.
  4. Clean the pan and heat the corn and lima beans over oil with some salt and pepper. When corn is thawed and getting tender, add the pesto. Pour out and allow to cool.
  5. Toss the tomatoes, squash, corn, herbs, and half of the dressing. Tos the greens with the other half of the dressing. Arrange the greens on a plate and add the squash/corn mixture on top.
