Recipe:Rustic Potato Chowder

This one is from 101 cookbooks, specifically the December 28, 2005 post. I'm not a fan of bacon, real or imagined, so this is slightly altered.

Ingredients

  • 3 T olive oil
  • 2 onions, chopped
  • 3 shalots, chopped
  • 4 cloves garlic, chopped
  • 4 C diced potatoes
  • 1 t salt
  • 4 C milk
  • 1.5 C Gruyere cheese
  • salt and pepper to taste

Instructions

  1. sauté onions, shallots, and garlic
  2. add diced potatoes and 1 t salt and sauté a few minutes until soft
  3. add milk, bring to a boil, then simmer for 25 minutes or until thickened
  4. whisk in the gruyere, and salt and pepper to taste.
  5. garnish; I used chives and crushed peanuts
