the December 28, 2005 post. I'm not a fan of bacon, real or imagined, so this is slightly altered.
Ingredients
- 3 T olive oil
- 2 onions, chopped
- 3 shalots, chopped
- 4 cloves garlic, chopped
- 4 C diced potatoes
- 1 t salt
- 4 C milk
- 1.5 C Gruyere cheese
- salt and pepper to taste
Instructions
- sauté onions, shallots, and garlic
- add diced potatoes and 1 t salt and sauté a few minutes until soft
- add milk, bring to a boil, then simmer for 25 minutes or until thickened
- whisk in the gruyere, and salt and pepper to taste.
- garnish; I used chives and crushed peanuts
