Recipe:Pumpkin Cookies

Ingredients
- Cookies:
- 2 C flour
- 1 t baking soda
- 1/2 t salt.
- 1 t cinnamon
- 0.5 t nutmeg
- 0.5 t ginger
- 0.25 t cloves
- 1 C shortening (or apple sauce)
- 1 C pumpkin
- 1 C sugar
- 1 egg
- 1 t vanilla
- 1 C chopped nuts (optional)
- 1 C chopped dates or golden raisins
- Frosting:
- 3 T butter
- 4 T milk
- 1/2 C brown sugar
- 1 C powdered sugar (sifted)
- 1/2 t vanilla
Instructions
- Sift together the dry stuff
- Add the wet stuff (sugar counts as wet stuff, just so you know)
- Fold in the nuts and dates
- Bake in 350 degree oven for 10-12 minutes.
- For the frosting, combine the butter, milk, and brown sugar in a sauce pan.
- Boil on low heat for a few minutes then add the powdered sugar and vanilla
- Frost cookies by dipping the top 1/2 into the warm frosting (it crusts over when it cools).
