Recipe:Pumpkin Cookies

Ingredients

  • Cookies:
    • 2 C flour
    • 1 t baking soda
    • 1/2 t salt.
    • 1 t cinnamon
    • 0.5 t nutmeg
    • 0.5 t ginger
    • 0.25 t cloves
    • 1 C shortening (or apple sauce)
    • 1 C pumpkin
    • 1 C sugar
    • 1 egg
    • 1 t vanilla
    • 1 C chopped nuts (optional)
    • 1 C chopped dates or golden raisins
  • Frosting:
    • 3 T butter
    • 4 T milk
    • 1/2 C brown sugar
    • 1 C powdered sugar (sifted)
    • 1/2 t vanilla

Instructions

  1. Sift together the dry stuff
  2. Add the wet stuff (sugar counts as wet stuff, just so you know)
  3. Fold in the nuts and dates
  4. Bake in 350 degree oven for 10-12 minutes.
  5. For the frosting, combine the butter, milk, and brown sugar in a sauce pan.
  6. Boil on low heat for a few minutes then add the powdered sugar and vanilla
  7. Frost cookies by dipping the top 1/2 into the warm frosting (it crusts over when it cools).
