Recipe:Open-Face Wild Mushroom and Fontina Sandwiches

Ingredients

  • 1lb mixed fancy mushrooms
  • 5T olive oil
  • 1t minced rosemary
  • 1t minced thyme
  • 2 minced shallots
  • 0.25C Marsala
  • sliced french hearth bread
  • 6oz Fontina, grated
  • 2 T minced parsley

Instructions

Preheat your broiler

  1. Stem and slice mushrooms
  2. Sautee rosemary briefly, then add mushrooms, salt, and pepper, and sautee until they begin to brown
  3. Add shallots and thyme, allow to blend
  4. Add Marsala and boil until gone
  5. Season with salt and pepper
  6. Place bread slices on a baking sheet and toast lightly in broiler
  7. Remove from oven, add cheese, and re-broil until melted.
  8. Mix parsley into mushrooms and spoon over bread.
