Recipe:Open-Face Wild Mushroom and Fontina Sandwiches

Ingredients
- 1lb mixed fancy mushrooms
- 5T olive oil
- 1t minced rosemary
- 1t minced thyme
- 2 minced shallots
- 0.25C Marsala
- sliced french hearth bread
- 6oz Fontina, grated
- 2 T minced parsley
Instructions
Preheat your broiler
- Stem and slice mushrooms
- Sautee rosemary briefly, then add mushrooms, salt, and pepper, and sautee until they begin to brown
- Add shallots and thyme, allow to blend
- Add Marsala and boil until gone
- Season with salt and pepper
- Place bread slices on a baking sheet and toast lightly in broiler
- Remove from oven, add cheese, and re-broil until melted.
- Mix parsley into mushrooms and spoon over bread.
