Sarah and I took a trip to Victoria, B.C. in August, 2004. While we were there, we went to the local folk festival, at which there was a cooking demonstration by the staff of rebar, a local vegetarian restaurant (that occasionally serves some seafood, but they're honest about it). Sarah answered a question about salad greens correctly, so she got to be one of the tasters. The cooks were interesting and obviously cared about making good vegetarian food. We ended up visiting the restaurant twice, and bought the cookbook.

The recipes are not easy, and the results are extraordinarily flavorful -- these are definitely hearty, winter dishes. There are a number of great ways to prepare tofu, and lots of great sauces. I highly recommend both the restaurant and the cookbook.
