There are two bread bibles. This one, by Rose Levy Beranbaum, has a lot of description of Rose's experiences baking, and good explanation of the finer points of baking ingredients. It's a pleasure to read, as she clearly loves baking and has worked to refine her recipes.
That said, it's short on the explanations of what's happening. Sometimes a recipe will fail, and the book's not much help in figuring out why. I'd suggest Category:Cookbook:I'm Just Here for More Food for such explanations.
