Ed Dryer gave me this cookbook -- Carol Gelles' 1000 Vegetarian Recipes. It's written and set in a style similar to Joy, but is limited to vegetarian recipes. It's a little short on ingredient descriptions, but the recipes tend to be of moderate complexity and hard to screw up (much as I try).
